Ingredients - serves 4
2 medium avocados
100g spinach
80g cashews
20g pine nuts (10g for sauce, 10g for topping)
Large bunch of basil
Juice of half a lemon
2 large garlic cloves
Pinch of chilli flakes
Salt & pepper
250g spaghetti
Method
Blend everything together in a food processor apart from 10g of pine nuts. Cook your pasta as per packet instructions. Once it's ready, drain and add in the sauce. Top with the pine nuts, some basil leaves, salt & pepper.
