Baked Oats with Pumpkin Seeds & Dark Chocolate



Ingredients - serves 6


200g oats

2 medium bananas

400ml semi skimmed or soy milk

60g vanilla whey

5ml vanilla extract

5g baking powder

25g honey

15g pumpkin seeds

3 squares of dark chocolate (we used Mackies)

Good handful of blueberries


Method


Mash the bananas well then stir in the oats, baking powder, whey, vanilla extract, honey and milk. Mix very well. Line a baking tray with grease proof paper then pour in the mixture. Now sprinkle the blueberries, chopped chocolate pieces and pumpkin seeds. Place in the oven for 35 mins at 180*. Cut into either 12 or 6 portions. Serve with greek yogurt and a drizzle of maple syrup!
