Ingredients - Serves 4
200g Mafalda Corta pasta
50g spinach - chopped
40g pine nuts
60g basil pesto
100g edamame beans (frozen)
300g pre-cooked salmon
Method
Cook the pasta as per packet instructions, after a few minutes add the frozen beans in too. Chop the spinach. Once the pasta is ready, drain and add the pesto, pine nuts and spinach and mix thoroughly. Now add your pre-cooked salmon. You can have this dish hot or cold!
