Giant Cous Cous with Butter Beans & Feta



Ingredients - serves 5


1 chicken or veggie stock cube

1 red pepper

3 spring onions

100g feta cheese

400g butter beans - drained

625g wholewheat giant cous cous

4 stalks of tenderstem broccoli

Olives - optional


Method


Cook the cous cous as per packet instructions. Once cooked simply add the other ingredients. All veg is raw so just chop them up small and add through the cous cous. Sprinkle the feta on and season with salt & pepper.
