Ingredients - serves 5
250g red lentils
1 tin tomatoes
1 tin chickpeas
1 tin light coconut milk
1 carrot
1 onion
3 garlic cloves
10 cherry tomatoes
1-200ml veggie stock
3 tsp tikka powder
1 tsp garam masala
1/2 tsp cinnamon, tumeric, all spice
Salt
Handful chopped coriander
Method
Fry the chopped onion, carrot and garlic for around 8 minutes. Add the spices and mix well. Add the rest of the ingredients, pop the lid on and simmer for 40ish minutes. You can add more stock as you go if you need to loosen the mixture. Once it's ready add a good handful of chopped fresh coriander. You can serve with rice, bread or just on it's own.
